Butternut squash and Coconut milk soup
2 cups butternut squash
1 can coconut milk
about 1/3 cup water
Curry to taste
In a deep large saucepan fry up butternut squash.
Add coconut milk. Stir on medium to low heat.
Add curry. Add water as needed. Mash with a
potato masher.
You could also add a diced carrot and some sauteed onion
