From Lylah's Kitchen - Beef and Barley Soup

I love soup! Lately, we've been eating tons of it. I guess you can figure that out from my blogging :-)


I've been on a hunt for new recipes, if you have a favorite, I'd love you to send it to me. Here's one I got today....looks great!


Beef and Barley Soup
1 pound stew beef -- cut in 1/2" cubes
1 medium onion -- chopped
2 stalks celery -- chopped
2 carrots -- diced
3/4 cup barley
1 bay leaf
1 teaspoon salt -- or to taste
pepper to taste
6 cups beef stock
Place all ingredients in a slow cooker.
Cook on low for 6 to 8 hours, stirring occasionally.

Hello Lylah. Thanks for sharing the recipe for Chicken Tortilla Soup. I served it yesterday to guests in my home and everyone love it and wanted the recipe. The crockpot made it easy, and the house smelled wonderful when we walked in the door after church. Crusty bread and a spring greens/spinach salad went along nicely with soup.

I'm so jazzed you made the chicken tortilla soup and that it was a hit. Yes...the good smells do fill up the house...and by the way...it does freeze ok...blessings...
